Short ribs are one of the most flavorful and tender cuts of beef, and they are perfect for low and slow cooking methods like roasting, smoking, or braising. This recipe from The Bondi Meat Co is a crowd-pleaser, featuring a delicious BBQ glaze that is slightly tangy, smoky, and sweet. The glaze adds a sticky and caramelized layer to the ribs, creating a mouthwatering flavor and texture.
Ingredients:
For the glaze:
1/2 cup (125ml) tomato paste
1 tbsp Heinz tomato sauce
2 tbsp BBQ sauce
1/4 cup (55g) brown sugar
2 tbsp apple cider vinegar
1 tbsp Worcestershire sauce
1 tbsp butter
1 tbsp Dijon mustard
1 tsp ground paprika
For the short ribs:
2 x 1.2kg pkts Bondi Meat Co beef short ribs
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp cayenne pepper
1 tsp sea salt
1 tbsp American mustard
1 tsp dried thyme
1 tsp ground black pepper
Instructions:
Preheat a covered barbecue on low heat. Alternatively, preheat the oven to 150C.
Bring the short ribs to room temperature and cover a roasting pan with foil.
Brush the ribs with American mustard. In a bowl, combine the ground cumin, smoked paprika, cayenne pepper, sea salt, thyme, and black pepper. Sprinkle the mixture over both sides of the ribs.
Cover the pan with foil and roast in the barbecue using indirect heat or in the oven for 20 minutes.
To make the glaze, combine the tomato paste, tomato sauce, BBQ sauce, brown sugar, apple cider vinegar, Worcestershire sauce, Dijon mustard, butter, and ground paprika in a bowl. Stir thoroughly for a minute or until the mixture is well combined and slightly thickened.
After 20 minutes, uncover the ribs and brush them evenly with the barbecue sauce. Cook for 3 hours, brushing with any extra sauce every 30 minutes, until the ribs are sticky and falling off the bone.
Once the ribs are cooked, glaze them with any remaining sauce or glaze. Serve hot and enjoy!
Tips and Tricks:
For a smokier flavor, add a few wood chips to the barbecue or use a smoker box.
If you prefer a spicier glaze, add more cayenne pepper or a few dashes of hot sauce.
You can use the same glaze for other cuts of meat like chicken, pork, or beef brisket.
To save time, you can prepare the glaze and the spice rub in advance and keep them in the fridge for up to 3 days.
If you want to make the dish less messy, you can wrap the short ribs in foil during the cooking process and unwrap them during the last 30 minutes to let them caramelize.
